Favorite 4th of July foods: potato salad (made two ways: one with Dill pickles & one with sweet pickles to make everyone in the family happy :) )
and watermelon cubed with feta cheese (cubed)and some watercress for a great refreshing summer salad !

My potato salad. It never fails. I will be making it for a military family BBQ this year and fully expect it to disappear as it always does. My kids always ask me to make it whenever they come home to visit :) .

ingredients
a 7-ounce jar roasted red peppers, drained
2/3 cup fine fresh bread crumbs
1/3 cup walnuts, toasted lightly and chopped fine
2 to 4 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1 tablespoon fresh lemon juice, or to taste
2 teaspoons pomegranate molasses*
1 teaspoon ground cumin
1/2 teaspoon dried hot red pepper flakes
3/4 cup extra-virgin olive oil
toasted pita triangles as an accompaniment

growing up in the military and now as a military wife..nothing reminds me of home and my family then strawberry pie!!!! my mom would always make it for any bbq’s or potlucks…its fast and simple and delish!

3/4 cup sugar
3 tbsp. cornstarch
1-1/2 cups water
1 pkg. strawberry jello
4 cups fresh strawberries cleaned and cut up
1 prebaked pie crust
1/2 cup COOL WHIP

mix sugar and cornstarch in a pot..stir in water till blended..bring to boil..keep stirring.. about 2 min..remove from heat..add jello box.. stir 2 min. until completely dissolved..stir in strawberries..pour into crust and refrigerate 3 hours..when firm top with cool whip..enjoy!!

DEBBIE’S POTATO SALAD
5 lbs. red skinned potatoes (chopped in large pieces)
3 or 4 stalks of celery (finely chopped)
1½ to 2 small bunches scallions (green tops only – finely sliced)
16 oz. container sour cream
1½ to 2 cups mayonnaise (depending on how wet you like it)
2 tablespoons whole celery seed
Salt to taste

Bring large pot of water to boil. Leave skin on potatoes, clean and cut off any bad spots, chop in large pieces and boil for 25 minutes. After potatoes cook, cool them either in the refrigerator or under cold water (water is much faster). Drain and place potatoes in very large bowl; slice up any large pieces while combining all ingredients well. Refrigerate for at least one hour then enjoy!

Our 4th of July is probably like most people’s. We would get together with our friends and family. We would start up the grill and start making our favorites kabobs, burgers and hot dogs for the kids. My wife would make potatoe salad, and baked beans.

Our famly tradition for any major holiday during the summer is a Good Ole’ BBQ. MY husband has the best grilling technique and gets compliments from all of oour guests. I am known for the baking part and Banana Creme cookies are my specialty! Kid approved and parent devoured!!!! Happy 4th to all my fellow Military families and God bless.

Filipino Cantaloupe drink (Sa Malamig)

1/2 cantaloupe shredded (1.5 cups)
1 cup sugar
2 Liters/quarts ice water

Cut cantaloupe in half, scrape out the seeds and cut off the rind. Shred the cantaloupe in a food processor and then put the shredded cantaloupe into a 2 quart pitcher. Add one cup of sugar and stir it well. Let it sit for about 15 minutes so the sugar will draw the cantaloupe juice out. Add ice and enough water to make 2 quarts of drink. Mix it well and pour it into glasses–shredded cantaloupe and all. Eat the cantaloupe shreds as you drink the juice.

Orangesicle Cheesecake Whoopie Pies

Whoopie pies (or cake)
1 box white cake mix
1 and 1/2 cups of orange soda

Vanilla Cream Cheese Frosting for filling
8 ounces cream cheese
1/3 cup butter
1 and 1/2 teaspoons vanilla extract
2 to 3 cups powdered sugar (depending on consistency and taste)

For cake portion-
Mix cake mix, orange soda in a bowl. Spoon into whoopie pie pan and bake for approximately 10 minutes at 350 degrees.

For Vanilla Cream Cheese Frosting
With electric mixer, beat cream cheese, butter and vanilla extract in large bowl until smooth. Slowly beat in powdered sugar until desired consistency and sweetness is reached.

Alternatively you can bake the cake in an 8 x8 pan and top with Vanilla Cream Cheese Frosting

I ALWAYS make gooey bars for dessert….

1 Box yellow cake mix, 1 egg and 1 stick of butter for the bottom…mix really well and press in the bottom… of 8×11 dish….
Then I put a layer of fruit..usually strawberries and blueberries….
Then mix: 1 thing of cream cheese, 1tsp of vanilla 1/2 lb of powdered sugar and 2 eggs..
Put over the fruit and back at 350 for 40-45 minutes…
Pull out to completely cool…after room temp I generally place in the fridge for awhile…

So Yummy! Happy 4th all, I’ll be making some for my soldier and his battle buddies!

Black bean salsa with avocado, tomato, cumin, onions and sweet corn on the cob. It’s colorful and always tastes amazing. The perfect place to congregate at any get together is around the dip.
